Recently, Proctor & Gamble developed Olestra (sucrose polyester), a zero calorie fat-based substitute, at a cost of $200 million. This product has been approved by the Federal Drug Administration (FDA) with warning labels. What is olestra? The olestra molecule differs from a fat molecule in that it has six to eight fatty acids on a sucrose core, as opposed to three fatty acids on a glycerol core. The bulkier olestra molecule is not digested, absorbed , or metabolized, and thus provides no caloriesâ⬠(Stern & Hermann-Zaidins ,1992 ). It has the same taste and texture of fat, and even retains this texture in deep frying.
